KiteNest Nosh - Dandelion Shortbread Biscuits

A bright, sunny spring twist to an old school classic. Made from only 5 ingredients and totally vegan. These edible flowers are great for foraging with the kids and add a sweet, buttery taste. They’re also loaded with vitamins. Wondering why Dandelions are good for you?

Ingredients

  • 125g plant-based butter softened
  • 65g sugar
  • 1/2 cup dandelion petals (yellow parts only)
  • 310g plain flour
  • pinch of salt

Method

Step 1: Preheat oven to 160C/140C Fan/Gas 3.

Step 2: Cream together your butter and sugar with a mixer until light and fluffy.

Step 3: Remove the yellow petals from the dandelions. Beat them into the mixture.

Step 4: Gradually add flour, beating to incorporate fully. The dough will start as crumbly at first. Knead gently with your hands until the dough comes together.

Step 5: Roll out your dough onto a floured worktop. Cut out with your favourite cookie cutters.

Step 6: Place on a well-greased baking tray. Bake for around 20 minutes. Check if they’ve begun to brown on the bottom to see if they’re filled cooked.

Step 7: Place them on a cooling rack. Once completely cool, tuck in and enjoy.
