KiteNest Drink: Christmas Pudding Vodka

This recipe combines two of the best things about December: booze and pudding! Make as a fun festive gift, or to enjoy yourself during the holidays.

Ingredients:

  • 300g mixed dried fruit 
  • 75g caster sugar
  • 2 cinnamon sticks
  • 2 tsp mixed spice
  • 6 cloves
  • ½ nutmeg, finely grated
  • 1 orange, zest only, finely grated
  • 1 unwaxed lemon, zest only, finely grated
  • 750ml vodka (of reasonable quality)

Method

Step 1: Mix all of the dry components together (dried fruit, sugar, cinnamon sticks, mixed spice, cloves, grated nutmeg and lemon and lime zest) in a large bowl.

Step 2: Pour over the vodka, and cover tightly (why not use a wax wrap? Or hold a tea towel in place with an elastic band?). Keep hold of the vodka bottle (it’s a good sterile bottle to store the final product in). 

Step 3: Stick it in the fridge for 3 days, stirring once a day.

Step 4: Line a sieve with something to finely filter (such as a sterile cloth or muslin) and place over a large, clean jug. Pour the dried fruit and vodka mixture into the sieve and allow to drip through into the jug, then give it a squeeze to get maximum return. 

Step 5: Pour your infused vodka back into the bottle and keep in the freezer. Serve on the rocks. Enjoy! As for the leftover fruit pulp? Add it to your mince pies, Christmas pudding or cake for an extra boozy richness!
