KiteNest Nosh - Blueberry Pancakes

There’s something that feels great about sitting with your nearest around the table, watching your dad flip the pan and all tucking into pancakes. These are cooked with blueberries for a naturally-sweet kick and dose of vitamins.

What you need:

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 3 tablespoons cooking oil
  • 2 plant-based milk (we used oat milk)
  • Small punnet of blueberries
  • Yoghurt and banana for topping (optional)

What to do:

Step 1: Sift the flour (stops lumps) with the baking powder, sugar and salt in a large bowl.

Step 2: Add your oil and plant-based milk. Mix. Try not to over the mix the batter, or let it sit for too long.

Step 3: Heat up a pan with vegetable oil. Fold the blueberries into the batter and stir until combined. Pour a ladle full of batter into your pan. Cook on each side for approx 2-3 minutes. Don’t be tempted to flip the pancakes too soon. Vegan pancakes can sometimes be more sticky, so may need a little longer to cook.

Step 4: Serve with more blueberries, sliced banana and blueberry yoghurt (optional).
