KiteNest Nosh: Fruity Flapjack

These fruity flapjacks are easy to make, but always go down a treat. The best thing about them is that you can use any dried fruits that you have in the cupboards, and they’ll taste delicious.


Ingredients 

  • 250g Oats
  • 250g Dried Fruit
  • 170g Butter
  • 75g Caster Sugar
  • 75g Golden Syrup

Suggested Fruits

  • Raisins
  • Sultanas
  • Cranberries
  • Goji Berries
  • Dates

Method

Step 1: Prepared your dried fruit. If they’re larger than you’d like, chop them up. Then, put them into a bowl with hot water for five minutes to add some moisture back to them. Then drain.

Step 2: Melt the butter, sugar and syrup together over a gentle heat. You’ll need to keep stirring to make sure that the sugar doesn’t burn to the bottom of your pan. 

Step 3: Once smooth, take off the heat and stir in the oats and dried fruits. 

Step 4: Tip the flapjack into a lined, greased baking tray. Bake in the oven at 160C for about 40 minutes. 

Step 5: Mark squares into the flapjack while still warm to make it easier to cut up. Don’t remove the flapjack from the tray until it is cool, or it may collapse into a messy flatjack!
